Paseo Bistro turns 75, brings new chef in from France

Paseo Bistro in Mill Valley, celebrating its 75th anniversary, has introduced Sylvain Montassier as their Executive Chef. His New American menu epitomizes the restaurant’s commitment to using seasonal, naturally harvested and locally sourced ingredients from the area’s best artisans, growers and producers.

Comments Paseo Bistro owner Ki Yong Choi, whose Mill Valley roots go back three decades, “I saw in Chef Montassier the ideal combination of training, experience and inspiration to take our menu to the next level and I gave him carte blanche to do so.”

Chef Montassier, a French native, has almost 30 years of professional experience that stretches from France and England to San Francisco and Chicago. Most recently he was the owner and Executive Chef of Pacifica Brewery in Pacifica, California and has also worked at venues including Cetrella Restaurant in Half Moon Bay, and Belden Taverna and Boulevard Restaurant, both in San Francisco. He graduated from the Culinary School of Saumur in France in 1993 with a Classical French Food and Pastry degree and subsequently staged at 2 and 3 Michelin star restaurants in Europe.
